My Three Favorite Ways to Cook a Steak

Because I'm eating so much steak nowadays, I thought it'd be a good idea to share my three favorite ways of cooking it. Now, I like my steak on the rare side, so if you like yours closer to well-done, these may not work as well for you. In any case, here are my three favorite ways to cook it, in order:

  1. Charcoal Grilling
    I think most people agree that nothing beats a steak cooked over a real fire. Gas grills aren't bad, but I don't think you get the same smoky flavor that you get from charcoal.
    Prep time: 15–30 minutes. Cook time: 3–5 minutes per side.
  2. Pan-Searing
    If the weather's not cooperating or you just don't have the time to fire up the grill, Alton Brown's method for cooking a steak with a cast iron skillet and your oven works surprisingly well. The steak is left with a good crust and is cooked so quickly it retains its juiciness. Try this method if you haven't already.
    Prep time: 10–15 minutes. Cook time: 5 minutes.
  3. Countertop Grilling
    If I can't grill out, and the oven is tied up with another task, my George Foreman grill is my third choice. Much like pan-searing, the steak cooks quickly enough the juices stay inside. What I don't like is that I've got an older model that doesn't have the removable cooking trays, so clean-up takes a little longer.
    Prep time: 2–3 minutes. Cook time: 4–5 minutes.
